Unusual preparation for the winter: beetroot with plum

Pickled beets

Beetroot with plum is an original recipe for harvesting for the winter. A sweetish vegetable and a slightly sour berry are combined into an unusual flavor range. The result is a ready-made interesting salad that can be used as an addition to rice or meat, as well as added to borscht.


  • Beets – 500 g;
  • plum – 300 g;
  • water – 1 l;
  • sugar – 100 g;
  • salt – 20 g;
  • vinegar – 60 ml;
  • cloves to taste.

Cooking method

  1. To prepare the marinade, combine water, salt, sugar, vinegar and cloves Bring everything to a boil.
  2. Add the washed and chopped plums to the boiling marinade, blanch them. After a few minutes, remove the plum and remove the marinade from heat.
  3. Cut the pre-boiled and peeled beets. Lay the vegetable in sterilized jars in layers, alternating with the plum.
  4. Pour boiling marinade over the beets and plums, close the jars with lids. Turn them over, wrap them in a towel and leave to cool.

Can also be done for the winter pickled beets in Korean. To do this, you need vinegar, garlic, Korean carrot seasoning and sunflower oil.
