Homemade mascarpone

Homemade mascarpone cream cheese is easier to make in your own kitchen than to look for a natural and sometimes unreasonably expensive analogue on the supermarket shelves. The recipe is based on just butter and milk, you will have to spend about 20 minutes at the stove, and then just wait for the tender cream cheese to be ready.


  • butter with a fat content of 82% – 80 g;
  • milk with a fat content of 3.2% – 350 g;
  • lemon juice – 1 tbsp. l.;
  • sugar – 0.5 tsp;
  • salt – 1 pinch.

Step by step cream cheese recipe:

  1. Heat up milk and butter. It is not necessary to bring to a boil.
  2. Remove from the stove and beat the mass with a blender until completely homogeneous. This will take about 5 minutes.
  3. We return the saucepan to a small fire again. Add sugar, salt, lemon juice.
  4. As soon as the mass begins to separate into cheese clot and whey, remove from heat.
  5. Leave for 5 minutes to completely separate the cheese mass from the whey.
  6. We cover the colander with 6 layers of gauze, filter the resulting mass.
  7. Leave until all the whey has drained and the homemade cream cheese is ready.

Even easier to cook homemade hard cheese. This recipe only takes about 20 minutes.
